New Orleans Creole
Creole Jambalaya
Creole jambalaya — sometimes called 'red' jambalaya — gets its color from tomatoes, the way it's usually made in New Orleans. Cajun-style 'brown' jambalaya skips the tomatoes and leans on browned meat instead.
