Ingredients
- 4bone-in pork chops, about ¾ inch thick
- 1 tspkosher salt
- 1 tspblack pepper
- 1 tspgarlic powder
- 1 tsppaprika
- ½ cupall-purpose flour, divided
- 3 tbspvegetable oil
- 2 tbspunsalted butter
- 1large yellow onion, thinly sliced
- 3 clovesgarlic, minced
- 2 cupslow-sodium chicken broth
- ½ cupwhole milk or half-and-half
- 1 tspfresh thyme leaves (or ½ tsp dried)
Instructions
- 1
Pat chops dry. Mix salt, pepper, garlic powder and paprika and season both sides. Dredge in ¼ cup of the flour, shaking off excess.
- 2
Heat oil in a large skillet over medium-high. Brown chops 3 minutes per side. Transfer to a plate (they'll finish cooking later).
- 3
Reduce heat to medium. Add butter and onion and cook 6–8 minutes until soft and golden. Add garlic for 30 seconds.
- 4
Sprinkle remaining ¼ cup flour over onions and stir 2 minutes. Slowly whisk in broth, then milk and thyme, scraping up browned bits.
- 5
Return chops and any juices to the skillet. Cover and simmer on low 20–25 minutes, turning once, until tender.
- 6
Check that chops read at least 145°F with a 3-minute rest. Taste gravy and adjust seasoning before serving.
Cooking notes
- If the gravy gets too thick, loosen it with a little more broth.
- Boneless chops work too; reduce simmering time to 12–15 minutes.
Serving suggestions
Spoon gravy over white rice or mashed potatoes, with collard greens or green beans on the side.
Storage
Refrigerate in the gravy, covered, up to 3 days.
Reheating
Reheat covered over low heat with a splash of broth until hot throughout.
