Southern Pot Roast
Put this in the oven after church and the whole house smells like Sunday. Chuck roast needs time and gentle heat — a few hours braising and it falls apart under a fork.

Ingredients
- 3 ½ lbboneless beef chuck roast
- 2 tspkosher salt
- 1 ½ tspblack pepper
- 2 tbspvegetable oil
- 1large onion, cut into wedges
- 4 clovesgarlic, smashed
- 2 tbsptomato paste
- 3 cupslow-sodium beef broth
- 1 tbspWorcestershire sauce
- 3 sprigsfresh thyme
- 2bay leaves
- 1 ½ lbsmall Yukon Gold potatoes, halved
- 4carrots, cut into 2-inch pieces
- 2 tbspcornstarch mixed with 2 tbsp cold water
Instructions
- 1
Heat oven to 325°F. Pat roast dry and season all over with salt and pepper.
- 2
Heat oil in a Dutch oven over medium-high. Sear roast 4–5 minutes per side until deeply browned. Remove to a plate.
- 3
Lower heat to medium. Add onion and cook 4 minutes. Stir in garlic and tomato paste for 1 minute.
- 4
Add broth and Worcestershire, scraping the bottom. Return roast, add thyme and bay leaves. Liquid should come about halfway up the roast.
- 5
Cover and braise in the oven 2 ½ hours.
- 6
Nestle potatoes and carrots around the roast, cover and cook 45–60 minutes more, until beef is fork-tender and vegetables are soft.
- 7
Move beef and vegetables to a platter. Skim fat from the liquid, bring it to a simmer on the stove, and stir in the cornstarch slurry until thickened.
Cooking notes
- Tough, chewy pot roast usually needs more time, not less.
- A splash of red wine can replace ½ cup of the broth.
